I love grilled cheeses! But let's be honest...that's not the healthiest option for a meal. Here's an easy and healthy way to jazz up a gooey grilled cheese without the added calories and fat.
Grilled Spinach Panini
1/4 cup of sliced baby Bella mushrooms
1/4 cup diced onions
1/2 cup spinach
1/3 cup mozzarella cheese
4 slices Italian bread
1 tsp. extra virgin olive oil
Garlic power to taste
Pepper to taste
Basil to taste
Sautée onions for about a min over med heat in EVOO. Add mushrooms and sautée for 1-2 min. Add spinach and seasonings to taste. Spoon veggies onto two slices of bread. Add mozzarella and top the two sandwiches with the last two slices of bread. Grill on a panini grill or George Forman until cheese is melted and bread is toasted.
Makes 2 sandwiches.
